This guacamole with chicken is delicious. I first tried this at a catered event I attended. It was so good I stopped by the grocery store on my way home and purchased the ingredients for guacamole and some chicken breast. I made it the next day and it was a huge hit with the entire family.

My teenage boys and their friends all love it and it’s so good for them. The only problem is that you can’t always find great avocados throughout the year in Arkansas. We try to eat as much of it as we can during spring and summer.

If you prefer plain guacamole, just leave out the chicken. I usually make about twice this much so you may want to make small adjustments in ingredient amounts according to your taste.

Ingredients:

4 ripe avocados, mashed with a fork

1 large clove garlic, minced

1 or 2 jalapeño peppers, chopped

½ small purple onion, chopped

1 small tomato, chopped

1/3 cup cilantro, chopped

1 cup cooked chicken, chopped

Juice of 1 lime (2 if not juicy)

Sea salt to taste

 

Procedures:

  1. Combine all ingredients and serve with tortilla chips or tortillas.
  2. Guacamole is also great on a wrap or as a sandwich spread. Just omit the chicken.

Grenadine will most often be in the bar-mix section of your supermarket. I don’t always have grenadine on hand so if you don’t have it just substitute a few berries if you want.

If you have flax oil or flax seeds on hand, be sure to add a teaspoon of flax also.

1 cup fresh pineapple, chopped

1/2 cup fresh papaya, peeled and chopped

1/4 cup guava nectar

1 tablespoon fresh lime juice

1 teaspoon grenadine (optional)

1/2 cup ice

 

Procedures:

1. Place the ingredients in a blender, in the order listed.

2. Pulse a few times to chop the fruit, then blend until smooth and serve immediately.

Ingredients:

6 garlic cloves, peeled and minced

1 can black beans, rinsed and drained

2/3 cup fresh cilantro, chopped

4 green onions, thinly sliced

2 pickled jalapeño chili peppers, finely chopped or 1 fresh chili pepper finely chopped

Sea salt and pepper to taste

 

Procedures:

  1. Mash beans with potato masher or fork.
  2. Stir in the vinegar, lemon juice and cumin until the ingredients are well combined. Fold in the cilantro, green onions, jalapeño chili peppers, salt and pepper, and serve.

 

This recipe can be made ahead and refrigerated. Bring the dip to room temperature before serving for best flavor.
